This was my first holiday in Colorado and away from home and let me tell you, it was the probably one of the most emotional holidays I've ever had. Matt and I really, really wanted to go home but so many circumstances were preventing that from happening. We decided to stick it out here and just enjoy the quiet company of each other and the snow covered mountains.
Since our roommates and a couple of friends were also sticking around for the holiday, we decided to throw a Friendsmas, you know.. like a Friendsgiving. We cooked a ham, eggplant parm, potatoes and veggies, cheesey rolls and some pudding pie and it was all DELICIOUS. Although we didn't get to see our families and we felt homesick at moments, we still enjoyed the time we spent with our friends here.
I didn't want my family to be left without gifts from me so I mailed a box home with goodies that I handmade. Silvia patiently watched me as I wrapped the gifts. She's been so sassy since it's been snowing the past couple of days and she can't play outside -- my girl needs her sunshine.. and so do I!
